Heaven needed mom.




So many things of mom I miss,
Her gentle touch and tender kiss.
I can still feel her warm embrace.
And picture her loving face.

A mother's task are never done
And heaven must have needed one
For angels came and took her hand
And led her to Gods promised land.

She is surely kept busy there,
While brushing little angels hair
And making sure they are dressed right.
Not staying out too late at night.

Although there is sadness, this I know
She is waiting there, her face aglow.
I close my eyes and I can see
Her arms still open.
Wide for me.

Attention Ladies!!

Creamy Chicken Salad

If you love chicken a lot then this is something you want to try. The best part of this dish is that you can decide what kind of vegetables you want to use and you can even make it fruity!!! Yep! I added grapes to mine and boy oh boy how delicious it turned out!


Ingredients. 

1. 3-6 pieces of chicken breasts ( optional, you can use laps)

2.  2 pieces of green pepper

3.  Green leafy vegetables

4.  1 lemon

5.   Seedless Grapes

6.   Mayonnaise

7.    Carrot (shredded)

8.    Salt

9.     Spices 

10.  Onions ( chopped)


Method. 

1: boil the chicken and include all the spices to the stock. I prefer the chicken to not be too soft. This way you get to chop it more easily.

2. Wash all your vegetables and cut them accordingly. The leafy vegetables should be cut, green pepper-chopped in cube sizes, carrots-shredded, onions-chopped. Also cut the seedless grapes into two equal half's. Do this for the whole bunch.

3. Get a large bowl ready. Squeeze all the juice from the lemon into the bowl. Check your boiling chicken.. Try tasting it to be sure that its okay.

4. Wait for the chicken to cook before chopping it. I always boil the chicken a night before or hours before I am ready to make the salad. When it is cool then you chop into cubes or you can shred it if you like

5. Pour all the vegetables into the large bowl and mix lightly. Leave out the diced grapes at first. Add salt to the mixture then add the chopped chicken and grapes together with the juice from the grapes. 

6. Stir lightly and add some spices if you like. According to your taste you can then add the mayonnaise. Since it is creamy salad I add a lot of it!!!! But hey it depends on individual taste too..at the end of mixing your mayonnaise your mixture should look like this...


After you can serve it with a cold drink if you like...

So a friend of mine sent me this picture above captioning it as "how he looks when good food is placed in front of him" hahahaha now that had me laughing a lot but on taking a closer look at the picture, an idea came up in my heart almost immediately.  I remembered the word "rejoice" and so I set off to edit it the best I could! When I was done, I sent it back to him and he replied saying "wow did you just do that" I guess I am becoming more creative huh?? Here is the one i edited below.....

Beauty lies in the eyes of The beholder.

Its been a while now since I blogged..I have been so busy with school and most nights I am either studying or watching medical videos via YouTube...oh I missed out the research part! Yes I am busy doing that a lot too...but I am trying to make out time for the things that are important.
 
So I came across this picture sometime last week on twitter and I saved it. It was captivating for me. Just looking at these children coming together to make something out of nothing had me smiling and appreciating just how much we can achieve when we come together to do even the little things that we don't even regard or pay attention to.

There is always an atom of beauty in the things we do....we just have to let ourselves see it.

Happy new month!!

Happy new month everyone!!! I can't believe April is here already! God has been so Faithful to us don't you think? In a world where wicked and evil things happen we are still alive. His word says in the book of Ecclesiastes 9:4 that there is still hope for all who are joined to the land of the living for a living dog is better than a dead lion! 

So no matter what has happened so far this year, there is still hope for us because we have life! Hallelujah!
